Third time making this recipe and it turned out really excellent after marinating the pork for over a day. I made this ahead to use it pork bun and I wonder how I should store it- should I slice it? Chop it? Or store as a big chunk and chop on the day of cooking? Any suggestions?

Hi Chun Yang, you still have to preheat even if you are using a toaster oven or convection oven. I believe the Breville is similar to an air fryer, so you could follow the directions for our air fryer char siu recipe if using the convection mode.

As a cook for a decade I have to ask. Are you putting it in something to large to marinate it all efficiently or maybe the pieces are too large so it’s not able to penetrate as deep?

I was wondering if I should adjust in any way if I was cooking in a Breville instead of a regular oven. I saw what you said about convection ovens. Would it be better to just have the convection setting turned off? Also, should I even bother pre-heating it to 475 in a smaller toaster oven like the Breville?

Hi kay, it really depends upon the size of the pieces and the bone. Cooking time will likely increase and you will probably have to turn down the heat to prevent scorching and burning.
