I have followed your site and have made so far 37 of your recipes. I stocked my pantry using your lists and just dove in. The recipes are easy to follow and the amount of time Chinese/Asian women put into preparing foods symbolizes a humbling sense of dedication, family traditions and most of all the profound love of cooking for your family! My friend who is Asian tells me I am an old Asian woman hiding in a redheaded, green eyed Irish/German body. I adore Asian/Korean/Chinese food over American foods. Oh to have a Chinese Mother and Grandmother to teach me everything they know. My Asian friend cant cook anything and shes so wasted a lifetime of her heritage as her Mother is Korean her father Asian. Makes me sad! Passing on the love the compassion the history is so important!! thank you for the recipes and all of the love you have put into your site. Its like you are cooking with me! Bless you!!!

Hi Nicolai, the Sichuan dried chilies are actually not all that spicy. They’re not meant to knock you flat; they actually get added to recipes in large quantities in dishes like Chongqing chicken: https://thewoksoflife.com/chongqing-chicken/. If you want a really spicy chili, you can use the Thai chilies if you like!

They are truly invaluable and have really ignited my passion for cooking over the past few years.

I have a question though: which dried chilis do you prefer to use? I’ve used (super hot) Thai chiles in the past because they’re easier to come by where I live, but I recently switched to chao tian jiao/facing heaven chiles, which don’t seem very spicy in comparison. Or maybe I got a bad batch or just have to use a lot more?
